Ground Turkey Stir Fry

My countdown to turning 40 has officially started! I’m eating healthier and working out ALOT more. This Ground Turkey Stir Fry is quick, healthy and delicious! You could also meal prep with this dish and eat it a few times during the week. I I know ground turkey can get dry since there is not much fat, but you are not missing out on the fat with this stir fry. I also love this dish since you can get creative with your vegetables. I used what I had on hand but feel free to use your choice of vegetables. Add 1 tbsp of olive oil to a hot pan and fully cook 1 lb of ground turkey.

Season the ground turkey with 1 tsp of onion powder, 1 tsp of garlic salt and 1 tsp of paprika. Once the turkey is fully cooked, remove from the pan and set aside.

Chop 1 zucchini, 3 cloves of garlic and 2-3 stalks of green onion.

In the same pan as the ground turkey, add 1 tsp of olive oil and add the chopped veggies and 1/2 cup of matchstick carrots and stir.

Cook about 2 minutes or until the veggies start to soften and then add the ground turkey to the veggies. Stir well and put on low heat.

Why the ground turkey and veggies are cooking, its time to make the sauce. In a bowl, add 1/3 cup of reduced sodium soy sauce, 1 tbsp of honey, 2 tbsp of hoisin, 1 tsp of chili oil, 1/3 cup of water, 1 tsp of rice vinegar and 1 tbsp of cornstarch and whisk well.

Pour the sauce on top of the ground turkey and veggies and stir well.

Cook 3-5 minutes or until the veggies are soft and the sauce starts to thicken. Serve with brown or white rice and top with Sriracha sauce and green onions. Serve and ENJOY!

Ingredients

  • 1 lb ground turkey
  • 1 tbsp olive oil
  • 1 tsp olive oil
  • 1 tsp onion powder
  • 1 tsp garlic salt
  • 1 tsp paprika
  • 1 zucchini
  • 3 garlic cloves
  • 2-3 stalks of green onion
  • 1/2 cup matchstick carrots

Instructions

Stir Fry Sauce
  1. 1/3 cup reduced sodium soy sauce
  2. 1 tbsp honey
  3. 2 tbsp Hoisin sauce
  4. 1 tsp chili oil
  5. 1/3 cup water
  6. 1 tsp rice vinegar
  7. 1 tbsp cornstarch
