Broccoli Cheddar Soup

I’m ending this soup series with a banger!!!!! Its one of my favorite soups…Broccoli Cheddar Soup!!! Especially whenever it is served in a bread bowl! Its so delicious. You will mostly see this soup in cafes or restaurants that specialize in soup & salad type styles. It is very rich since it has a lot of cheese and pairs great with bread or even a sandwich. Oh yea, did I say how EASY this soup is??? Well, it extremely easy, quick and simple to make and you know I love those recipes! Start by dicing 1/2 of a yellow onion and 2 broccoli crowns. You could also use frozen broccoli for this recipe but I HIGHLY suggest using fresh broccoli. The 2 broccoli crowns should be about 4 cups of broccoli.

In a pot, add 2 tbsp of butter. Once the butter melts, add the diced yellow onion and cook until the onions are soft.

Add 1 tbsp of minced garlic and the 4 cups of chopped broccoli.

Sprinkle 1 tbsp of flour and stir well.

Add 1 cup of shredded carrots and stir.

Add 3 cups of chicken broth and 2 cups of heavy cream to the pot and stir well.

Add 3 cups of shredded cheddar cheese and season with 1 tsp of cajun seasoning and 1 tsp of garlic salt and stir well.

Cover the pot with a lid and cook on medium heat for 20-25 minutes or until the broccoli is tender.

While the soup is cooking, prepare the bread bowls. Preheat the oven to 400 degrees. Cut a circle in the middle of 2 boules bread and remove the extra bread to make a hollow center. Melt 1 tbsp of butter and 1/2 tsp of garlic sauce in the microwave and brush the butter on the inside of the bread bowls.

Add the bread bowls to the oven and bake for 8-10 minutes or until golden brown.

Remove the lid from the soup. Add salt & pepper and taste to make sure it is seasoned to your liking.

Remove the bread bowls from the oven and add the soup.

Put extra shredded cheese on top of the soup and serve with a salad for a complete meal. Serve and ENJOY!

Creamy, cheesy and comforting soup made with broccoli and carrots simmered in a cheese sauce and served in a bread bowl.

Ingredients

  • 1/2 diced yellow onion
  • 4 cups of broccoli (2 fresh broccoli crowns)
  • 1 tbsp of minced garlic
  • 1 tbsp flour
  • 2 cups of heavy cream
  • 3 cups of chicken broth
  • 1 cup shredded carrots
  • salt & pepper (to taste)
  • 1 tsp cajun seasoning
  • 1 1/2 tsp garlic salt
  • 2 1/2 cups of cheddar cheese
  • 3 tbsp of butter
  • 2-4 bread boules (optional)

Instructions

  1. Preheat the oven to 400 degrees.
  2. Dice the yellow onion and chop the broccoli crowns into small pieces.
  3. Melt 2 tbsp of butter in a pot and add the diced onion. Cook until the onion is soft.
  4. Add broccoli and garlic to the pot and stir.
  5. Sprinkle the flour and stir again. Add shredded carrots and stir.
  6. Add chicken broth and heavy cream and stir well. Add 3 cups of shredded cheese and stir again. Reserve 1/2 cup of shredded cheese for serving. Season with cajun seasoning and 1 tsp of garlic salt. Cover the pot with a lid and cook for 20-25 minutes or until the broccoli is tender.
