Spicy Zuppa Toscana Soup
Im still adding to my soup series and this one is definitely a MUST TRY!!! I don’t think there is a word in the English dictionary to perfectly describe how delicious this soup is. I think my Husband licked the bowl clean LOL!!! Yes, I know we’ve all had it from Olive Garden but I think my version is better and more flavorful! Oh yea, did I mention how easy this was?? I love soups because you can get creative with the ingredients and make it your own. There are many versions of this soup out everywhere so just use that ingredients that works best for you. Dice 6 slices of bacon into small pieces and dice 1/2 medium onion and set aside.
Wash, peel and cut 2 large russet potatoes and wash 2-3 leaves of fresh kale and break apart into small pieces. You should have 2 cups of potatoes and 2 cups of chopped kale and set aside.
Fully cook the bacon pieces and set aside.
Add 1 pack of hot italian sausage to the same pan and fully cook. Once cooked, set aside and use tongs and a paper towel to remove the excess oil from the sausage.
In the same pan, add 1 tbsp of butter. Once the butter has melted add 1 tbsp of minced garlic and 1/2 diced onion and cook until the veggies are soft.
Add the cooked sausage back to the pan. Season with 1 tsp of onion powder, 1 tsp of garlic powder, 1 tsp of cajun seasoning, 1 tsp of dried oregano and 1 tsp of garlic salt and stir well.
Add the washed, peeled and chopped potatoes and 6 cups of chicken broth to the pan and stir.
Cover the pot with a lid and cook 25-30 minutes or until the potatoes are fork tender.
Remove the lid and add 2 cups of chopped kale, 1 cup of heavy cream, 1/2 tsp of red pepper flakes and the cooked bacon pieces and stir well.
Cover the pot with the lid and cook for another 10 minutes.
Remove the lid and serve in your favorite soup bowl with salad and breadsticks for a complete meal. Serve and ENJOY!

A creamy and flavorful soup with hot Italian sausage, bacon, potatoes and kale simmered in a rich broth.
Ingredients
- 1 16 oz package of hot Italian sausage
- 2 large russet potatoes (2 cups)
- 6 slices of bacon
- 1/2 yellow onion
- 2 cups of fresh chopped kale
- 6 cups chicken broth
- 1 tbsp butter
- 1 tbsp minced garlic
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp cajun seasoning
- 1 tsp garlic salt
- 1 tsp dried oregano
- 1 cup heavy cream
- 1/2 tsp red pepper flakes
Instructions
