Seafood Spinach Dip

Anytime you mix seafood, cheese and spinach together, its for sure a good dish and this dip is no different! My Hubby kept coming back for seconds and thirds lol! Since the Super Bowl is this weekend, I wanted to make a dip that will be a crowd pleaser and this is definitely it! You can be creative with the type of seafood that you use in this dip. I used shrimp and lump crabmeat. Start by peeling and cutting 1 lb of shrimp into halves. This will give you more shrimp and smaller pieces to eat.

In a pan, add 1 tbsp of butter. Once the butter melts add the shrimp to the pan. Season with 1 tsp of cajun seasoning, 1 tsp of onion powder and 1 tsp of paprika and stir well. Cook until the shrimp are fully cooked and set aside.

In the same pan, add 1 tbsp of butter and 1 tsp of garlic and stir. Add 4 cups of fresh spinach to the pot and cook until the spinach has cooked down and minimized in size. Use cooking shears to cut the spinach into smaller pieces.

Add 1 block of cream cheese to the spinach and pour in 1 cup of heavy cream and stir.

Once the cream cheese has fully melted, add 1 cup of shredded pepper jack cheese and stir well.

Add the cooked shrimp (reserve 6 shrimp for a garnish) and 1 8 oz can of lump crab meat and stir well. Season with salt & pepper (to taste) and stir.

Pour the dip in a cast iron skillet or an oven-safe dish and sprinkle 1 cup of shredded pepper jack cheese on top. Put the reserved 6 shrimp on top of the cheese.

Add the dip to a 400 degree oven and cook for 15 minutes. Cook on broil for 1-2 minutes or until the cheese is golden brown on top.

Remove from the oven (it will be hot!!!) and serve with garlic bread or chips. Serve and ENJOY!

A creamy and delicious dip made with cheese, spinach, lump crab meat and shrimp.

Ingredients

  • 1 lb of raw shrimp
  • 1 8oz can of lump crab meat
  • 2 tbsp butter
  • 1 block of cream cheese
  • 1 cup heavy cream
  • 4 cups fresh spinach
  • 1 tsp minced garlic
  • 2 cups shredded pepper jack cheese
  • 1 tsp cajun seasoning
  • 1 tsp onion powder

  • salt & pepper (to taste)
