Chicken Caesar Pasta Salad

Chicken Caesar Pasta Salad

Its that time of the year to bring out the pasta salads! They are easy, quick and extremely delicious! I love how you can get creative with pasta salads and add your favorite ingredients and make it your own. For this pasta salad I wanted to combine Chicken Caesar with it and it was a hit! Might be my new favorite way to eat pasta salad! Start by fully cooking 5 cups of bowtie pasta according to the package directions. Fully cook 4-6 slices of bacon and chop into small pieces and set aside. Season 2 chicken breasts with 1 tbsp of olive oil, 1 tbsp of garlic salt, 1 tbsp of paprika, 1 tbsp of onion powder and 1 tbsp of lemon pepper seasoning and make sure it is fully coated.

Add 1 tbsp of olive oil to a cast iron griddle pan. Once the pan is hot, add the chicken breasts. Cook 5-7 minutes on each side or until the internal temperature reaches 165 degrees. Once fully cooked, remove from the skillet and set on a cutting board.

Chop one of the chicken breasts into small pieces. Slice the other chicken breast to place on top of the pasta salad and set aside.

In a bowl, add cooked bowtie pasta, 2 cups of washed and chopped Romaine lettuce, bacon pieces, 1 cup of sundried tomatoes, 1 cup of Caesar dressing, ½ pack of Ranch seasoning and 1/2 cup of shredded parmesan cheese and toss well. Feel free to add more dressing if needed.

Once tossed, place the sliced chicken breast on top. Serve and ENJOY!
