Oxtail Mac n’ Cheese

Oxtail Mac n’ Cheese

I recently saw some oxtail mac n’ cheese on a menu at a restaurant and I knew I wanted to make it. I had some oxtails in my freezer so I was excited to get this started. I know this is a long process to make some mac n’ cheese, but please trust the process. After making this dish, I gave myself a pat on the back, it is THAT GOOD! Normally, I would offer suggestions to switch up certain items to accommodate your preference, but for this recipe, every item is a must. Again, trust me!!!! Start by seasoning 6-10 medium sized clean oxtails with 2 tbsp of garlic powder, 2 tbsp of onion powder, 2 tbsp of cajun seasoning, 2 tbsp of paprika, 2 tbsp of brown sugar, 2 tbsp of browning sauce, ½ diced yellow onion, 1 diced red bell pepper, 1 diced green bell pepper and 4 cloves of chopped garlic and mix well. Make sure the oxtails are fully coated in the seasonings and veggies.

Cover with plastic wrap and marinate for at least 30 minutes.

In a large pot, add 2 tbsp of vegetable oil. Once the oil is hot, add the oxtails. Cook about 10-15 minutes or until browned on each side.

Once the oxtails are browned, remove from the pot and set aside. In the same pot, add the leftover marinade to the pot and stir well.

To the veggies, add 4 dashes of Worcestershire sauce and 1 tbsp of ketchup and stir well.

Add the oxtails back to the pot, along with 5 cups of beef broth and 2 sprigs of thyme and cover with a lid. Cook for 3 hours on medium heat or until the oxtail meat is tender and falls off of the bone.

Remove the lid and remove the sprigs of thyme from the pot. Discard any excess oil that has floated to the top of the oxtails.

Once the oxtails have slightly cooled, remove the meat from the bones and set aside. Save 2 or 3 whole oxtails for a garnish.

To make the mac n’ cheese, shred 1 8 oz block of gouda cheese (2 cups), 1 8 oz block of colby jack cheese (2 cups) and 1 8 oz block of cheddar cheese (2 cups) and set aside.

Cook 1 box of Cellentani (Cavatappi) pasta according to the package directions. In a separate pot, melt 4 tbsp of butter. Once fully melted, add 1 tbsp of flour and whisk well.

Add 3 cups of heavy cream and whisk well.

Add 1 tbsp of the oxtail gravy along with 2 cups of shredded gouda, 1 cup of colby jack and 1 cup of cheddar cheese and stir well. Season with salt & pepper (to taste). Cook for 3-5 minutes or until the cheese sauce has thickened.

Pour the cooked Cellentani (Cavatappi) pasta noodles into the cheese mixture and stir well.

Pour half of the mac n’ cheese into an oven safe dish and spread evenly. On top of the mac n’ cheese, add the shredded oxtail meat and gravy and spread evenly. Add the remainder of the mac 'n’ cheese on top of the oxtail meat. On top, spread 1 cup of shredded cheddar cheese and colby jack cheese evenly.

Add the mac’n cheese to the oven on broil for 1 minute or until the cheese has melted and golden brown.

Remove from the oven and add the 2-3 whole oxtails on top. Serve and ENJOY!
