Lasagna Soup

I know how long it takes to make a good lasagna and whenever I created the recipe for this soup, I wanted to make sure it had all of the flavors in less time. I can definitely say that I accomplished that! This soup was finger-licking good, actually, bowl-licking good! I felt like I was eating an actual lasagna! Last year, lasagna soup was a hit recipe on social media and I was a little skeptical about it. Once my Daughter suggested that I make one for my soup series, I figured I would give it a try and i’m glad I did! For this recipe I used ground beef but you could use ground turkey or/and ground Italian sausage. Your choice! Fully cook 1lb of ground beef.

Using a paper towel, remove any excess oil.

To the pot, add 1/2 diced yellow onion and 1 tbsp of minced garlic and stir.

Season with 1 tsp of onion powder, 1 tsp of garlic powder, 1 tsp of cajun seasoning, 1 tsp of paprika and 1 tsp of dried parsley flakes and stir well. Cook until the onions are soft.

Add 1 1/2 tbsp of tomato paste and stir well.

Add 1 24 oz jar of your favorite marinara sauce and stir well.

Add 2 tsp of sugar and stir well (the sugar cuts the acidity of the tomatoes).

Break 4-5 lasagna noodles (about 1 1/2 cup) into the pot.

Add 6 cups of beef broth and stir well. Cover the pot with a lid and cook 30-45 minutes or until the lasagna noodles are tender.

Remove the lid and add 1/2 cup of heavy cream, 1/3 cup of shredded parmesan, 1 tbsp of chopped fresh parsley and salt & pepper (to taste) and stir well. Taste to make sure it is seasoned to your liking.

In a bowl, add 1 package of Boursin garlic & herb cheese, 1 tbsp of shredded parmesan cheese and 1 tbsp of heavy cream and stir well until the cheese is smooth.

Serve the soup in your favorite bowls and add a dollop of cheese mixture on top. Garnish with fresh parsley and serve and ENJOY!

Lasagna Soup

Easy soup that tastes just like lasagna with ground beef, noodles, garlic and onions simmered in a rich marinara sauce and topped with garlic & herb cheese.

Ingredients

  • 1 lb ground beef
  • 1/2 diced yellow onion
  • 1 tbsp minced garlic
  • 1 1/2 tbsp tomato paste
  • 1 24 oz jar of marinara sauce
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp cajun seasoning
  • 1 tsp dried parsley flakes
  • 1 tsp paprika
  • 2 tsp sugar
  • 4-5 lasagna sheets
  • 6 cups of beef broth
  • 1/2 cup of heavy cream
  • 1/2 cup shredded parmesan
  • 1 tbsp fresh parsley flakes
  • salt & pepper (to taste)
  • 1 package of Boursin Garlic & Herb Cheese
  • 1 tbsp heavy cream

Instructions

  1. Fully cook the ground beef and drain the excess oil.
  2. Add diced onion and minced garlic to the ground beef and stir well. Season with onion powder, garlic power, cajun seasoning, paprika and dried parsley flakes. Cook until the onions are soft.
  3. Add the tomato paste and stir well. Add the marinara sauce and stir well.
  4. Break the lasagna sheets into 2 inch pieces and add to the pot. Stir and make sure the noodles are covered in the sauce.
  5. Add beef broth and stir. Cover the pot with a lid and cook 30-45 minutes or until the noodles are tender.
  6. Remove the lid and add heavy cream, 1/3 cup of shredded parmesan, 1 tbsp of fresh parsley and salt & pepper and stir. Taste to make sure it is seasoned to your liking.
  7. In a bowl, add Boursin cheese, 1 tbsp of shredded parmesan cheese and 1 tbsp of heavy cream and stir until the cheese is smooth.
  8. Add the soup to a bowl and top it with a dollop of garlic & herb cheese mixture and garnish with more parmesan cheese and fresh parsley. Serve and ENJOY!
