Pasta Salad

Spring time is almost here and this Pasta Salad is perfect for something light to eat. I didnt say “healthy”, I said “light” :) LOL I love pasta salad since you can get creative with the ingredients. You can use your favorite pasta and veggies and toss it in a dressing of your choice. Pasta salad is always better once it has been in the refrigerator for a couple of hours. I used garden rotini pasta for this recipe since it adds extra color to the dish. Cook the pasta of your choice according to the package directions.

Chop 1 red bell pepper, 1 cucumber and 1/2 cup of red onion. Drain the liquid from the can of black olives.

To a bowl, add the cooked pasta (5-6 cups), chopped red bell pepper, chopped cucumber, chopped red onion, 2 oz can of black olives, 1/2 cup of sundried tomatoes, 1 package of Italian dressing seasoning, 1 cup of creamy Italian dressing and 1/2 cup of shaved parmesan cheese and toss well.

Make sure all of the ingredients are tossed well and. Feel free to add more dressing if you like your pasta salad extra creamy.

Refrigerate for at least 2 hours. Serve with your favorite main dish. Serve and ENJOY!

A fresh and easy pasta salad made with rotini pasta, crisp vegetables, and parmesan cheese tossed in a creamy Italian dressing.

Ingredients

  • 5-6 cups of Garden Rotini pasta
  • 1 diced cucumber
  • 1 diced red bell pepper
  • 1/2 cup diced red onion
  • 1/2 cup sundried tomatoes
  • 1/2 cup shaved parmesan cheese
  • 1 package of Italian dressing seasoning
  • 1 cup of creamy Italian dressing
  • 1 2 oz can black olives

Instructions

  1. Cook the pasta according to the package directions.
  2. Dice the cucumber, red bell pepper and red onion. Drain the liquid from the can of black olives.
  3. In a bowl, add the cooked pasta, diced cucumber, diced red bell pepper, diced red onion, black olives, sun-dried tomatoes, Italian dressing seasoning, creamy Italian dressing and shaved parmesan cheese and toss well.
  4. Once fully tossed, refrigerate for at least 2 hours. Serve and ENJOY!
