Bacon Bleu Cheese Chips

There’s this new cajun restaurant that my Hubby and I have been going to lately and they have these bleu cheese chips on their menu. We tried them and loved them, so you know I had to make them at home. I think my version is better :) Making your own potato chips are the absolute best! My daughter even loved them. She did have one critique, make them spicy lol I told her next time. These kids are so use to eating these extremely hot chips and now she feels all chips should be spicy. For the cheese sauce I used bleu cheese but you can use gorgonzola, which has a similar flavor. Clean 2 large sized russet potatoes.

Using a mandoline, slice the potatoes thin. If you dont have a mandoline, slice the potatoes really thin using a knife.

Soak the potatoes in cold water for at least 15 minutes. This will remove the excess starch from the potatoes.

While the potatoes are soaking, cook 4 or 5 slices of bacon.

Drain the water from the potatoes. Using a paper towel, dry the potatoes.

Add 2-3 cups of vegetable oil to a cast iron skillet. Once the oil reaches 350 degrees, add the potatoes. Fry 5-7 minutes or until the potatoes are golden brown.

Once the potatoes are golden brown, add them to a baking rack and drain any excess oil. Once all of the chips are cooked, sprinkle with 1 tsp of salt.

In a pan, add 2 tbsp of butter. Once it is melted, add 1 tbsp of flour and whisk well.

Whisk in 1 cup of heavy cream and add 1/2 cup of shredded bleu cheese. Stir well.

Stir well and season with salt and pepper to taste. Cook until the sauce starts to thicken. Pour the sauce on top of the chips.

Chop the bacon into small pieces and add to the top of the chips.

Top with bleu cheese crumbles and green onions. Serve and enjoy!

Bacon Bleu Cheese Chips

Homemade potato chips topped with a bleu cheese sauce, bleu cheese crumbles and bacon. A fun flavor twist on your normal nachos.

Ingredients

  • 2 large Russet potatoes
  • 1 tbsp flour
  • 2 tbsp butter
  • 1 tsp salt
  • 2-3 cups vegetable oil
  • 1 cup heavy cream
  • 4-5 slices bacon
  • salt & pepper (to taste)
  • 1/2 cup shredded bleu cheese
  • bleu cheese crumbles (for garnish)
  • green onions (for garnish)

Instructions

  1. Wash and slice the Russet potatoes and let them soak in cold water for at least 15 minutes.
  2. While the potatoes are soaking, fully cook the bacon slices and chop into small pieces.
  3. Drain the water from the potatoes and dry them with a paper towel.
  4. Add the vegetable oil to a cast iron skillet. Once the oil has reached a temperature of 350 degrees, add the sliced potatoes.
  5. Fry 5-7 minutes or until the potatoes are golden brown.
  6. Once they are cooked, add them to a baking rack to drain any excess oil.
  7. Sprinkle 1 tsp of salt over the chips.
  8. In a pan, add 2 tbsp of butter. Once the butter has melted, whisk in the flour and heavy cream. Add the shredded bleu cheese and stir.
  9. Season with salt and pepper to taste. Cook 1-2 minutes or until the sauce thickens.
  10. Pour the cheese sauce on top of the chips and top with the chopped bacon. For more bleu cheese flavor, top with bleu cheese crumbles. Garnish with diced green onions. Serve and ENJOY!
