My friend and I were at brunch last weekend and she ordered some Nacho Tots but they called it “Brunch Tachos” on the menu. I was curious to see what these “brunch tachos” were. When the waiter brought them to the table, I was in awe! Besides the runny egg on top, these tachos were amazing! I was literally eating a nacho but with tater tots. I knew I had to make these at home. The only thing that I didnt like was that it had shredded cheese on the tachos instead of melted cheese. Im assuming they used shredded since it had the runny egg on top which would add a “melted” texture. I knew my recipe would have melted cheese. You know Im all about easy recipes, so I decided to use Velvetta for the cheese sauce instead of making my own. These little things were pure perfection! My family ate all of them in one night. There were no leftovers. For this recipe I used frozen tater tots and cooked them according to the package direction. Make sure to coat them with cooking spray so that they can get crispy.

Cook 1 lb of ground beef (you could also use ground turkey) in a skillet. Once it is fully cooked, drain any excess oil and add 1 package of taco seasoning. Stir and make sure the taco seasoning is fully incorporated.

In a pot, add 1 8 oz block of Velveeta cheese, 1/2 can of 8 oz can of Rotel tomatoes and 1/4 cup of whole milk. Stir well until the cheese is fully melted.

Once the tater tots are fully cooked. Sprinkle with some salt.

Layer the tater tots in an oven safe dish or cast iron skillet.

Top with the seasoned ground beef and melted cheese.

Add to a 400 degree oven for 5-7 minutes.

Top with diced red onions and jalapeno slices. Serve and ENJOY!

Ingredients

  • 2 lb bag frozen tater tots
  • 1 lb ground beef
  • 1 8 oz block Velveeta
  • 1/4 cup whole milk
  • 1/2 can Rotel
  • 1 package taco seasoning

Instructions

  1. Cook the tater tots according to the package directions.
  2. Add the ground beef to a skillet and fully cook. Drain any excess oil and add the taco seasoning. Make sure the taco seasoning is fully incorporated.
  3. In a pot, add Velveeta, Rotel and milk. Stir well until the cheese is fully melted.
  4. Remove the tater tots from the oven and sprinkle with salt. Layer them in an oven safe dish or cast iron skillet.
  5. Add the ground beef and cheese to the tater tots.
  6. Add to a 400 degree oven for 5-7 minutes.
  7. Remove from the oven and top with diced red onions and jalapeños. Serve and ENJOY!
