Broccoli, Rice & Cheese Casserole

I love a good casserole dish and this one is a crowd pleaser. Cheesy goodness added to broccoli, rice and topped with crushed crackers. How could you go wrong with this one? It’s simple and easy to make. This is one of my daughter’s favorite dishes for me to make. She says this is the only way she will eat broccoli but I always sneak veggies in her favorite dishes. This recipe calls for cream of chicken and processed cheese since this is the easy version. If you would prefer to make your own cheese sauce, use my cheese sauce in my Macaroni n’ Cheese recipe. This will work just as good! Before you start prepping, pre-heat your oven. Cook your broccoli and your rice. I used frozen broccoli florets but you can use fresh broccoli as well. Make sure the broccoli is tender, do not over cook or it will be mushy. Cook the rice according to the package directions. While your rice and broccoli are cooking, in a sauce pan, add the cream of chicken and processed cheese and melt evenly.

Once your cheese sauce has melted and your broccoli and rice are cooked, add all ingredients to a bowl. Make sure your bowl is big or you will have a huge mess mixing it all together.

When it is thoroughly mixed, add shredded cheese and seasoning. Do not add too much salt. The processed cheese has alot of salt and you do not want to add too much and make your casserole salty. Make sure you taste right after you season. Add some milk to thin out the mixture.

Once everything is mixed together and it is seasoned to your liking, add to your favorite casserole dish and spread evenly. Mine is in an aluminum pan since I brought this dish to a pot luck, otherwise, mine would be in a fancy dish. Once it is spread evenly, crush your favorite crackers to add on top. I used buttery crackers since they add more flavor. Its ok if you have a few chunks of crackers. Once it is topped with the crushed crackers, melt some butter and pour evenly on top. Put your dish in the oven.

Take out of the oven and it will have a crunchy top and cheesy at the bottom. ENJOY!

Broccoli, Rice & Cheese Casserole

Broccoli, rice and cheese thats crunchy and buttery on the top and cheesy in the middle!

Ingredients

Broccoli, Rice & Cheese
  • 5 cups of broccoli florets (fresh or frozen)
  • 1 can of Cream of Chicken
  • 1 16oz block of Velvetta cheese
  • 6 cups of long grain rice
  • 1 cup of whole milk
  • 12 crackers (Club, Ritz or Saltines)
  • salt and pepper (to taste)
  • 2 tbsp butter
  • 1 cup of shredded cheddar cheese

Instructions

  1. Pre-heat oven to 350 degrees.
  2. Cook the rice and broccoli according to the package directions.
  3. In a sauce pan, add the cream of chicken and velvetta cheese. Melt until it is a creamy texture.
  4. Add the broccoli and rice into a large bowl. Add the cheese sauce.
  5. Stir and add the milk to thin out the mixture. Add the shredded cheese to the mixture. 
  6. Add salt and pepper to taste. 
  7. Pour into a casserole dish.
  8. Crush the crackers and put on top of the mixture. Melt butter and pour evenly over the top of the casserole.
  9. Put the casserole into the oven uncovered for 25-30 minutes.
  10. Take out and serve.
  11. ENJOY!
