Buffalo Chicken French Bread Pizza

Buffalo Chicken French Bread Pizza

French bread pizza is one of the new “hot” items on social media right now. I love pizza and I love french bread so I figured I would hop on the “french bread pizza” train. I was pleasantly surprised on how much I loved it! I am normally a thin crust pizza girl, but this french bread pizza slowly changed my mind. I think it was because of the toppings that meshed well with the thickness of the bread. I grilled my own chicken and used store-bought buffalo sauce BUT you can use store-bought rotisserie chicken and make your own buffalo sauce if you would like. I wanted big chunks of chicken, the reason I didn’t use a store-bought rotisserie chicken. If you decide to do it the way I did, season 2 chicken breasts with 1 tbsp of garlic powder, 1 tbsp of onion powder, 1 tbsp of paprika and 1 tbsp of cajun seasoning on each breast. Make sure each breast is fully seasoned.

Add 2 tbsp of vegetable oil and 1 tsp of butter to an oven-safe pan and once the oil is heated, add the chicken breasts. Cook the chicken until it is browned on both sides.

Add the pan into the oven at 400 degrees and cook 8-10 minutes or until the chicken breasts has an internal temperature of 165 degrees.

Once the chicken is fully cooked and have rested for at least 10 minutes, cut the chicken into small chunks.

Add the chopped chicken to a bowl and add 1/2 cup of buffalo sauce and toss well. Make sure each piece is coated in the buffalo sauce.

Cut the french bread in half. In a bowl, add 2 tbsp of melted butter and 1 tsp of minced garlic and brush it on top of the french bread.

Add the bread to the oven on broil for 1-2 minutes or until the bread has a light brown color.

Evenly spread 2-3 cups of buffalo sauce onto each piece of french bread.

Evenly sprinkle 4 cups of mozzarella cheese and the buffalo chicken on top of each piece of bread.

Top with more cheese and 1/3 cup of sliced red onion.

Add to a 400 degree oven for 10-15 minutes or until the cheese is fully melted.

Remove from the oven and drizzle your favorite ranch dressing on top.

Cut and serve with a salad for a complete meal. Serve and ENJOY!
