Jerk Shrimp Scampi
Shrimp Scampi is one of my favorite shrimp dishes, either as a pasta dish or served with toast. Sometimes, I feel like my normal shrimp scampi needs a little kick so I decided to add some jerk spices. This is definitely my new favorite way to make this shrimp scampi. My Husband agrees! You get the spiciness from the jerk, sweetness from the tomatoes and the citrus from the lemon juice and it makes one flavorful masterpiece on a plate. Serving it with garlic bread really took it over the top lol. I did add wine to this dish but if you prefer to omit the wine, you can definitely do that. The wine just adds more flavors to the dish. Preheat the oven to 400 degrees. Season 1 lb of peeled and deveined colossal sized shrimp with 1 1/2 tbsp of jerk marinade. If you like it less spicy, use 1 tbsp of jerk marinade.
Once the jerk marinade is mixed in well, add 1 tbsp of garlic salt and 1 tsp of paprika a mix well.
Line the shrimp in an oven-safe dish.
Chop 3-4 garlic cloves and 2 small Roma tomatoes into small pieces and add to the shrimp along with 1 stick of sliced butter.
Add the juice of 1/2 lemon and 1/3 cup of white wine to the shrimp.
Sprinkle 1 tsp of dried parsley flakes on top and add to a 400 degree oven for 10-15 minutes or until the shrimp are fully cooked.
Remove from the oven and sprinkle 2 tbsp of grated parmesan on top.
Cut 1 loaf of french bread into 2 inch thick slices and spread butter on top of each slice. Sprinkle garlic salt on top of each slice for added garlic flavor (optional).
Put into a 400 degree oven for about 3-5 minutes or until golden brown.
Remove the bread from the oven and serve with the shrimp scampi. Serve and ENJOY!

Flavorful oven-baked shrimp with jerk spices, butter, white wine, veggies and lemon juice served with garlic toast.
Ingredients
- 1 lb colossal shrimp
- 1 stick of butter
- 1 1/2 tbsp jerk marinade
- 1 tbsp garlic salt
- 1 tsp paprika
- 3-4 cloves of garlic
- juice of 1/2 lemon
- 2 roma tomatoes
- 1/3 cup of white wine
- 1 loaf of french bread
- 1/2 stick softened butter (for spreading)
- 1 tsp dried parsley flakes
- 2 tbsp grated parmesan cheese
Instructions
- Preheat oven to 400 degrees.
- Season the peeled and deveined shrimp with jerk marinade. If you prefer less spicy, use 1 tbsp of jerk marinade. Once the jerk marinade is mixed in well, add garlic salt and paprika a mix well.
- Line the shrimp in an oven-safe dish.
- Chop the garlic cloves and roma tomatoes into small pieces. Spread the garlic and tomatoes evenly over the shrimp.
- Slice the stick of butter into small squares and add to the shrimp.
- Pour white wine and lemon juice on top of the shrimp and sprinkle the parsley flakes on top.
- Add to the oven and cook for 10-15 minutes or until the shrimp are fully cooked.
- Remove from the oven and sprinkle parmesan cheese on top.
- Cut the french bread into 2-inch thick slices and spread the softened butter onto each slice. Optional: sprinkle garlic salt on top for added flavor.
- Add the bread to the 400 degree oven for about 3-5 minutes or until golden brown.
- Remove from the oven and serve with the shrimp scampi. Serve and ENJOY!
