Hearty Meatloaf

Whenever I think of comfort food, meatloaf is at the top of my list. It is rich, hearty and full of flavor. Some meatloafs can be dry but this recipe includes ingredients that will keep it moist. Nothing is worst than a dry meatloaf. When I was in high school, my friends always came over whenever my mom made meatloaf. She passed this recipe down to me. You can use ground turkey, lamb or chicken if you are not a fan of beef or are cutting down your beef intake. Whichever protein you choose, use 2 lbs and put it in a large bowl. Be aware, your hands are going to get messy! Preheat your oven to 375 degrees. Dice 1 bell pepper and 1/2 onion.

For added flavor, I always use 1 pack of meat loaf seasoning. To make sure your meatloaf does not fall apart, take the end piece of a loaf of bread and crumble it finely. I would not suggest using canned bread crumbs, since it is processed, it does not hold well with the meatloaf.

To the ground beef, add 1 pack of meatloaf seasoning, crumbled bread, diced bell pepper, diced onion, 1 tsp garlic powder, 2 tsp of cajun seasoning, 1 tsp of onion powder, 1/2 cup of milk and 1 egg. The milk and egg will allow the meatloaf to retain moisture.

Mix well with your hands. Your hands will be messy!

Put the mixed ground beef on a baking sheet and mold it into a loaf shape. Cover with aluminum foil and cook in the oven for 45-50 minutes.

While the meatloaf is cooking, add 1 8 oz can of tomato sauce to a bowl. Some recipes call for ketchup on top but I am not a fan of that method. Ketchup can be too sweet! With the tomato sauce, you are able to control how sweet you want it to be. To the tomato sauce, add 1 tbsp of sugar, 1/4 tsp garlic salt, 1/4 tsp black pepper and 1/4 tsp onion powder. Stir well and taste to make sure it is to your liking

Once you have removed the meatloaf from the oven, pour the sauce on top. Put it back in the oven for 15 minutes.

Remove the meatloaf from the oven, slice and serve! Serve with my delicious Mashed Potatoes recipe. ENJOY!

A hearty meatloaf made with seasoned ground beef, onions and peppers, baked to perfection with a sweet and savory sauce.

Ingredients

Meatloaf
  • 2 lb ground beef (optional: ground turkey)
  • 1 green bell pepper
  • 1/2 onion
  • 1 slice of bread
  • 1 package of meatloaf seasoning
  • 1 tsp garlic powder
  • 2 tsp cajun seasoning
  • 1 tsp onion powder
  • 1/2 cup whole milk
  • 1 egg
Sauce
  • 1 8 oz can of tomato sauce
  • 1 tbsp of sugar
  • 1/4 tsp onion powder
  • 1/4 tsp tsp garlic salt
  • 1/4 tsp black pepper

Instructions

Meatloaf
  1. Preheat the oven to 375 degrees.
  2. Dice the onion and bell pepper.
  3. Crumble the slice of bread finely.
  4. In a bowl, add the ground beef, diced bell pepper, diced onion, crumbled bread, 1 pack of meatloaf seasoning, garlic powder, cajun seasoning, garlic salt, 1 egg and milk. Mix well.
  5. Put on a baking sheet to form into a loaf.
  6. Cover with aluminum foil and put in the oven for 45-50 minutes.
  7. Remove from the oven and pour the sauce on the meatloaf.
  8. Put back in the oven for 15 minutes.
  9. Remove from the oven and slice the meatloaf. Serve and ENJOY!
Sauce
  1. In a bowl, add the tomato sauce, sugar, onion powder, garlic salt and pepper.
  2. Stir and taste to make sure it is to your liking.
  3. Pour the sauce on top of the meatloaf.
