Loaded Potato Skins

Talk about easy and delicious, potato skins are it!!!! You can get creative and fill these with anything you like or you can keep it traditional like I did and fill them with cheese and bacon. You can feed the entire family with these goodies. Clean and wash 6-8 russet potatoes.

Brush each potato with olive oil and season with salt.

Add to a 400 degree oven and cook for 40-45 minutes or until the potatoes are soft.

While the potatoes are in the oven, cook 5-6 slices of bacon.

Add the bacon to a cutting board and chop the bacon into small pieces.

Once the potatoes are fully cooked, allow them to cool for at least 10-15 minutes before cutting them. Once they are cool, cut each potato in half and scoop the middle of the potato into a bowl. Repeat until all of the potato filling is removed.

Brush 1 tbsp of melted butter on to the potato skins and sprinkle 1 tbsp of garlic salt on top.

Put the oven on broil at 550 degrees and ad the potato skins to the oven for 2-4 minutes or until the edges are golden brown.

Remove from the oven and fill each potato skin with shredded cheese and bacon. Depending on the size of the potato skin, it should be about 1-2 tablespoons for each potato. Repeat until they are all filled.

Put the potatoes back in the oven under the broiler for 1 minute or until the cheese is melted. Be careful not to leave them in there too long or they will burn.

Remove from the oven and top with sour cream and chives. Serve and ENJOY!

Crispy, oven baked potato skins filled with bacon and cheese and topped with sour cream and chives.

Ingredients

  • 5-6 Russet potatoes
  • 2 cups shredded cheddar cheese
  • 5-6 strips of bacon
  • salt (as needed)
  • 1 tbsp garlic salt
  • 1/3 cup olive oil
  • 1 tbsp melted butter
  • sour cream & chives (garnish)

Instructions

  1. Pre-heat the oven to 400 degrees.
  2. Clean, wash and dry the potatoes.

  4. Add the potatoes to the oven and cook for 40-45 minutes or until the potatoes are fully cooked.
  5. While the potatoes are in the oven, fully cook the slices of bacon.
  6. Add the bacon to a cutting board and chop the bacon into small pieces. Set aside.
  7. Remove the potatoes from the oven and allow them to cool for at least 10-15 minutes.
  8. Once cooled, cut each potato in half and remove the filling. Repeat until all of the filling has been removed from each potato.
  9. Brush the potatoes with melted butter and sprinkle garlic salt on top.
  10. Turn the oven on broil at 550 degrees and add the potato skins back to the oven for 2-4 minutes or until the potatoes are golden brown on top.
  11. Remove from the oven and fill each potato with cheese and bacon.
  12. Put the potatoes back in the oven for 1 minute or until the cheese has melted.
  13. Remove from the oven and top with sour cream and chives. Serve and ENJOY!
