Skillet Lasagna

Skillet Lasagna

If you have been following me, you know that I love a good one pot meal and here is another goody!!! I know you are probably thinking, “how can lasagna get cooked in the skillet and in one pot?” Wellllll, im going to show you. This recipe has all of the same flavors of a traditional lasagna but an easier and faster way to cook it. I made this and my family loved it! They prefer this version instead of the traditional way since it was faster. Add 1 tsp of olive oil to a skillet. Once the oil is hot, cook 1 lb of ground beef and 1 lb of ground Italian sausage. I like the hot Italian sausage since it adds some spice to the dish.

Drain any excess oil from the ground meat and add 1/2 diced white onion and 1 tsp of minced garlic.

Season the veggies and ground meat with 1 tsp of garlic salt, 1 tsp of onion powder and 1/2 tsp of dried oregano. Stir well.

Add 2 jars of your favorite pasta sauce. You can make your own sauce but its easier to use a store bought one.

Remove half of the sauce from the skillet and reserve it in a bowl.

In a separate bowl, add 1 cup of ricotta cheese, 1 egg and 1/3 cup of shredded parmesan cheese. Mix well.

Grab one box of oven ready lasagna noodles and break them into 3 inch squares. Each lasagna sheet should make 3-4 squares. Layer the squares on top of the sauce that is in the skillet.

Add a few dollops of the ricotta cheese mixture on top of the noodles.

Add some of the reserved meat sauce on top and spread it on top of the noodles. Top the sauce with shredded mozzarella cheese.

Add another layer of lasagna noodles on top of the cheese.

Top the final layer with the remainder of the sauce, more shredded mozzarella cheese and a few pieces of chopped fresh basil leaves. Optional: if you have some ricotta cheese leftover, you can add more on top.

Cover the skillet with a lid and cook for 20-25 minutes or until the noodles are soft. Be sure to cook on low-medium heat so that the bottom layer does not burn.

Once the lasagna is cooked, serve with salad and garlic bread for a complete meal. ENJOY!
