Lemon Pepper Smoked Chicken

I have been seeing these “spatchcock” chickens a lot lately so I decided to make one. If you are asking “what is a spatchcock chicken?” I have your answer. Its the way a whole chicken is cut so that it lays flat. You will remove the back bone of the chicken and push it down so that it lays flat on your pan or grill. This was my first time trying this method and I must say, its going to be my new go-to. The chicken was extremely tender! Im assuming its because the other side is completely bare and all of the flavor is seeping into the meat part of the chicken. You will understand once you make this recipe. Since I love lemon pepper whole chicken, I knew a lemon pepper spatchcock chicken would take it to the top!!! Grab a whole chicken and put it on a large cutting board and lay the chicken breast side down.

Take some sharp cooking shears and cut the right middle side of the back bone. Do the same on the left side and completely remove the back bone of the chicken.

Flip the chicken over and push it down to flatten it. Flip the chicken legs to the front.

In a bowl, add 1/2 stick of butter, 1 tbsp of vegetable oil, 1 tbsp of garlic salt, 1 tbsp of onion powder and 1 tbsp of dried parsley and stir well.

Brush the butter mixture all over the chicken using a basting brush.

Take your favorite lemon pepper seasoning, make sure it is not too salty, and use 1/2 cup of seasoning to coat the chicken.

Add the chicken to a smoker. I used my Ninja Woodfire Grill, which is amazing! I pre-heated the grill to the smoker option and added hickory wood chips for added flavor.

Smoke the chicken for 30-45 minutes and remove it once it is fully cooked and has an internal temperature of 165 degrees.

Once removed from the smoker, allow the chicken to rest at least 10 minutes before cutting. Serve with your favorite side dishes and ENJOY!

Ingredients

  • 1 whole chicken
  • 1/2 stick of butter
  • 1/2 cup lemon pepper seasoning
  • 1 tbsp vegetable oil
  • 1 tbsp garlic salt
  • 1 tbsp onion powder
  • 1 tbsp dried parsley

Instructions

  1. Add the chicken to a large cutting board. Place the chicken breast side down.
  2. Cut and remove the backbone of the chicken. Flip it over and flatten the chicken.
  3. Add butter, onion powder, garlic salt, vegetable oil and parsley to a bowl and stir.
  4. Brush the butter mixture onto the chicken. Make sure it is fully covered.
  5. Fully season the chicken with lemon pepper seasoning. Make sure the lemon pepper seasoning used is not too salty.
  6. Add the chicken to a smoker. Smoke for 30-45 minutes or until the chicken is fully cooked and reaches an internal temperature of 165 degrees.
  7. Remove the chicken from the smoker and allow it to rest for at least 10 minutes before cutting.
  8. Cut and serve with your favorite side dishes. Serve and enjoy.
