Chicken Chalupas

I’m sure we have all had a Chicken Chalupas from Taco Bell when we were kids. I use to love them, along with Mexican Pizzas. Well, I had one recently and was not too impressed, so I decided to make some at home. A Chalupa shell is a mixture of a corn tortilla and flour since they are crispy and soft & fluffy. I used chicken breast for this recipe but feel free to use chicken thighs, ground beef or ground turkey. You can get creative with these. Cut 2 chicken breasts into small pieces.

Season the chicken with 1 package of taco OR fajita seasoning, 1 tsp of paprika, 1 tsp of garlic salt and 1 tsp of onion powder.

In a skillet, add 1 tbsp of butter and 1 tsp of vegetable oil. Once the butter has melted, add the chicken.

Cook 10-12 minutes or until the chicken is fully cooked. Once the chicken is cooked, add 1 4 oz can of green chiles.

Cook 5 more minutes and set aside.

In a cast iron skillet, add 1/2 cup of vegetable oil. Once the oil reaches 350 degrees, add 1 chalupa shell at a time. Cook 20-30 seconds per side or until golden brown. Once each side is brown, fold half of it to make a taco shell shape. Remove from the oil and set aside on a baking rack to drain any excess oil.

Repeat until all of the chalupa shells are cooked. Once done frying all of the shells, fill each one with chicken and chiles mixture, sour cream, lettuce, tomatoes and cheese. Feel free to be creative with the toppings.

Serve with your favorite side dish. ENJOY!

Chicken Chalupas

Crispy, soft & fluffy chalupa shells filled with seasoned chicken, green chiles, crispy lettuce, tomatoes, shredded cheese and sour cream.

Ingredients

  • 6-8 Chalupa Shells
  • 2 boneless, skinless chicken breasts OR thighs
  • 1 package of taco OR fajita seasoning
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1 tsp garlic salt
  • 1 tbsp butter
  • 1 tsp vegetable oil
  • 1/2 cup vegetable oil
  • 1 4 oz can green chiles
  • Filling/Toppings: sour cream, shredded cheese, lettuce, tomatoes (as desired)

Instructions

  1. Cut the chicken breasts into small pieces.
  2. Season the chicken with taco seasoning, paprika, onion powder and garlic salt. Make sure the chicken is fully seasoned.
  3. Add butter and 1 tsp of vegetable oil to a skillet. Once the butter has melted, add the chicken.
  4. Cook 10-12 minute or until the chicken is fully cooked. Add the green chiles to the chicken and stir.
  5. Cook for another 5 minutes and set aside.
  6. Add 1/2 cup of vegetable oil to a cast iron skillet. Once the oil has reached a temperature of 350 degrees, fry 1 chalupa shell at a time. Cook 20-30 seconds per side or until it is golden brown. Once both sides are golden brown, fold the chalupa in half to form a taco shape.
  7. Remove from the oil and set aside on a baking rack to drain any excess oil.
  8. Repeat until all of the chalupa shells are cooked.
  9. Fill each shell with the chicken mixture and top with sour cream, lettuce, tomatoes and shredded cheese.
  10. Serve and ENJOY!
