Balsamic Glazed Brussels Sprouts

I was an adult when I learned to love brussels sprouts. As a kid, I remember thinking brussels sprouts were gross mainly because they didn’t look appealing on television. As I got older, I realized that brussels sprouts are “baby cabbage” and I love cabbage! The first time I had them was at a restaurant and they were topped with a honey glaze. Those were way too sweet! I had them again and this time it had a balsamic glaze and I fell in love with them! Balsamic Vinegar is tart but I knew I could make it a bit sweeter by making it into a glaze. Then I thought about how I could take it to another level, so then I decided to add a salty factor and add bacon. These are magical!!! Grab some pre-packaged or freshly picked brussels sprouts and cut them in half. I used the pre-packaged ones and they were already cut in halves for me. Put them in a bowl and give them a good wash. Using a paper towel, pat dry the brussels sprouts and season with 1/2 teaspoon of salt.

In a pan, add 1-2 slices of bacon. You can use cooking shears to cut them in pieces or you can chop them once the bacon is cooked.

Once the bacon is cooked, remove and drain any excess grease. DO NOT discard the bacon grease. Pour the grease in a bowl. You are going to add the grease to the brussels sprouts.

Once your brussels sprouts are washed and dried, add them to a baking sheet. Pour 1 tbsp of bacon grease over the brussels sprouts and make sure they are evenly coated.

Add them to a 425 degree oven for 25-30 minutes or until the brussels sprouts are browned and soft.

In a sauce pan, add 1 cup of balsamic vinegar and 1/2 cup of brown sugar. Cook for 15-20 minutes on medium heat or until the sauce thickens. It thickens more once the glaze cools.

Remove the brussels sprouts from the oven and pour 2-3 tbsps of glaze over the top. Feel free to add as much or little as you like. Make sure not to add too much. Add the crumbled bacon and mix. You will have some extra glaze. Store the extra glaze in the fridge and use it on chicken, veggies or bread.

Oven roasted brussels sprouts topped with an homemade balsamic glaze and bacon!

Ingredients

  • 2 cups brussels sprouts
  • 1/2 tsp salt
  • 1 cup balsamic vinegar
  • 1/2 cup brown sugar
  • 1-2 slices of bacon
  • 1 tbsp bacon grease

Instructions

  1. Wash and cut the brussels sprouts in half.
  2. Pat dry with a paper towel.
  3. Season with 1/2 teaspoon of salt.
  4. In a pan, cook the bacon slices.
  5. Remove and reserve the grease.
  6. Add 1 tbsp of bacon grease to the brussels sprouts. Make sure they are evenly coated.
  7. Add the brussels sprouts to a baking sheet and put in a 425 degree oven for 25-30 minutes.
  8. In a pot, add balsamic vinegar and brown sugar. 
  9. Cook for 15-20 minutes or until the glaze is thick. The longer it cools, the thicker it will be.
  10. Remove the brussels sprouts from the oven and pour the glaze and crumbled bacon on top. 
  11. Serve with your favorite main dish.
