Mardi Gras Pasta

Whenever my family and I go to one of our favorite cajun restaurants, we always get their Mardi Gras Pasta. It is a southern cajun pasta dish with seafood, sausage and some added spice. Another easy one pot meal! If your family likes flavor and spice, then this recipe is perfect! Start by cooking 1 package of linguine noodles according to the package directions. You may only need about 1 1/2 of the box of noodles for this recipe. Next, peel and season 1 lb of colossal size shrimp with 1 tbsp of garlic powder, 1 tbsp of onion powder, 1 tbsp of paprika and 1 tbsp of cajun seasoning.

In a pan, add 1 tbsp of butter. Once the butter has melted, add the shrimp. Cook 2-3 minutes per side or until the shrimp is fully cooked. Once cooked, set aside.

Slice your favorite smoked sausage and set aside. Mine is Zummo’s Party Time sausage, its flavorful and has a bit of spice.

To the same skillet, add 1 tbsp of butter. Once the butter has melted, add the sausage. Cook 1-2 minutes on each side or until they are brown. Once browned, remove from the skillet and set aside.

To that same skillet, add 1 diced green bell pepper, 1 diced half of an onion, 1 tbsp of minced garlic and 1/2 cup of chopped mushrooms. Cook until the veggies are soft.

Once the veggies are soft, add juice of 1/2 of a lemon and stir.

Add 1 15 oz can of crushed tomatoes and 2 1/2 cups of heavy whipping cream and stir well.

Season with 1 tbsp of cajun seasoning and salt & pepper to taste. Add the crawfish tails and stir. Simmer for 10-12 minutes or until the sauce thickens.

Once the sauce has thickened, add the cooked linguine pasta to the sauce and stir.

Top with the cooked shrimp and sausage. Optional: top with shredded parmesan cheese.

Serve with garlic bread and ENJOY!

Linguine pasta tossed in a creamy marinara sauce with veggies and crawfish tail meat and topped with smoked sausage and shrimp

Ingredients

  • 1 lb colossal sized shrimp
  • 8 oz smoked sausage
  • 2 1/2 cups heavy whipping cream
  • 1 15 oz can of crushed tomatoes
  • 1/2 cup of chopped mushrooms
  • 12 oz crawfish tail meat
  • 1 package of linguine pasta
  • 1 tbsp minced garlic
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp paprika
  • 2 tbsp cajun seasoning
  • 2 tbsp butter
  • 1 diced green bell pepper
  • 1 diced 1/2 onion
  • juice 1/2 lemon
  • salt and pepper (to taste)

Instructions

  1. Cook the linguine pasta according to the package directions.
  2. Peel, devein and season the raw shrimp with garlic powder, onion powder, 1 tbsp of cajun seasoning and paprika.
  3. Add 1 tbsp of butter to a skillet. Once the butter has melted, add the shrimp. Cook 2-3 minutes per side or until the shrimp are fully cooked. Set aside.
  4. Add 1 tbsp of butter to the same skillet. Once the butter has melted, add the sliced smoked sausage. Cook 1-2 minutes per side or until the sausage has browned. Set aside.
  5. Add the diced onion, diced bell pepper, mushrooms and minced garlic. Cook until the veggies are soft.
  6. Add the lemon juice and stir.
  7. Add the crushed tomatoes and heavy whipping cream and stir well. Season with 1 tbsp of cajun seasoning and salt & pepper to taste. Make sure it is seasoned to your liking. Add the crawfish tails and stir. Simmer for 10-12 minutes or until the sauce thickens.
  8. Once the sauce has thickened, add the cooked linguine pasta and stir.
  9. Top the pasta with the cooked shrimp and sausage. Optional: top with shredded parmesan cheese.
  10. Serve with garlic bread and ENJOY!
